

Za’atar Cucumber Salad with Lemon Honey Thyme Fried Halloumi

Cucumber Salad
- 2 tablespoons olive oil 5 Lebanese cucumbers (or 2 regular cucumbers)
- 2 tablespoons za’atar
- 1 lemon, zested
- 2 teaspoons sumac
- 1 teaspoon salt
- 2 tablespoons mint leaves, finely chopped
- 1/4 cup chopped pickled red onions
- 2 tablespoons red wine vinegar
Lemon Honey Thyme Halloumi
- 17oz Halloumi, cut 1/4 inch sliced
- 1 lemon, juiced
- 2 tablespoons honey
- 2 sprigs thyme, leaves removed
Instructions
- In a bowl combine all the salad ingredients, toss, and let sit on the side while you prepare the halloumi
- For the halloumi heat a non-stick skillet over medium heat for about 1 minute before frying each side until golden brown.
- While the halloumi cooks in the pan, mix the honey, thyme, and lemon together to create a sauce
- Remove the halloumi from in pan into a shallow dish and pour over the halloumi
- Add the cucumber salad and fried halloumi over some couscous and enjoy!
