

Tomato Feta Salad with Date Kalamata Dressing

Salad
- 6–8 campari tomatoes, diced
- 1 cucumber, halved and thinly sliced
- 1/2 of a small red onion, thinly sliced
- 1/2 block of feta, cubed
Dressing
- 1/4 cup kalamata olives
- 1/2 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 lemon-zested
- 1/2 teaspoon each salt and pepper
- 1–2 large dates, soaked in water
- 1 teaspoon dried oregano
Instructions
- Add all the dressing ingredients to a blender then blend still smooth and creamy
- Pour over the chopped vegetables and cheese, toss and enjoy!
