Spiced Yogurt-Marinated Chicken


Ingredients

  • 2 lbs chicken breasts
  • 1/2 cup whole milk Greek yogurt
  • 1 garlic clove, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 teaspoons paprika
  • 1/2 teaspoon Aleppo pepper flakes (or red pepper flakes)
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cardamom
  • 2 tablespoons olive oil
  • Zest and juice of 1 lemon

Instructions

  1. In a mixing bowl, whisk together the yogurt, garlic, cumin, coriander, paprika, Aleppo pepper flakes, ginger, cloves, cardamom, olive oil, lemon zest, and lemon juice until well combined.
  2. Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 2–3 hours, or overnight for deeper flavor.
  3. Remove the marinated chicken from the refrigerator 30 minutes before cooking to bring it to room temperature.
  4. Preheat your grill or oven:
    1. For grilling: Preheat to medium heat. Grill the chicken for about 6–8 minutes per side, or until the internal temperature reaches 165°F (74°C).
    2. For baking: Preheat your oven to 400°F (200°C). Place the chicken on a baking sheet lined with parchment paper and bake for 20–25 minutes or until fully cooked.
  5. Let the chicken rest for 5 minutes before serving to retain its juices.
