Salsa Verde Roasted Fish & Broccolini

  • 1 bunch of parsley, finely chopped
  • 3 anchovy fillets, mashed
  • 1 teaspoon lemon zest
  • 1/2 lemon, juiced
  • 3 tablespoons pistachios, finely chopped
  • 1 garlic clove, minced
  • 1/2 cup olive oil

2-6oz fish fillets

1 lb broccolini


  1. In a jar, combine all the ingredients for the salsa verde and shake until well combined.
  2. Preheat the oven to 400 F and line a large baking tray with foil.
  3. Pat the fish fillets dry with some paper towels, place them in the middle of the pan, and add the vegetables evenly around.
  4. Drizzle everything on the pan with the salsa verde then evenly coat the fish and toss the broccolini to evenly coat with the salsa verde.
  5. Place the tray in the oven to bake for about 10 minutes, pulling it out to toss the broccolini, then place it back into the oven to bake for another 10-12 minutes until the fish is firm and the broccolini is well roasted.
  6. Plate and enjoy
