Salsa Verde and Tomato Bulgur
- 1/4 cup salsa verde
- 1/2 cup bulgur
- 8–10 cherry tomatoes
- 1 shallot, chopped
- In a saucepan combine 1 cup of water with the 1/2 cup of bulgur bring to a boil then simmer until no water remains with a lid on the pan.
- While the bulgur cooks add the tomatoes, shallot, and salsa verde to a large bowl
- Add the freshly cooked bulgur to the bowl with the other ingredients and combine until fully coated.
- Serve and enjoy
