Roasted Red Pepper Baked Shrimp and Feta with Spicy Cilantro Sauce


Ingredients

Zhuoug Sauce

  • 3 jalapeno peppers, halved
  • 2 garlic cloves
  • 1 teaspoon salt
  • 1 bunch of fresh cilantro leaves
  • 1/2 cup fresh parsley
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon coriander
  • 1/4 teaspoon cardamom
  • 1/2 cup extra virgin olive oil
  • 1 lemon, juiced and zested

Instructions

  1. Preheat the oven to 400 F and pour the prepared roasted red pepper sauce into a 1o inch skillet.
  2. Dress the shrimp in 1-2 tablespoons of olive, 1/2 teaspoon of salt, a big pinch of pepper, and minced garlic then place the shrimp on top of the sauce and fill in the empty spaces with crumbled chunks of feta.
  3. Bake on the top rack in the oven for 12-15 minutes or just until the shrimp turn opaque and the sauce begins to bubble.
  4. While the shrimp and feta bakes prepare the zhoug by simply blending everything in the food processor and a sauce is formed
  5. Drize the zhoug over the freshly baked shrimp and feta in the roasted red pepper sauce and serve with toasted bread!
