


Roasted Red Pepper Baked Shrimp and Feta with Spicy Cilantro Sauce

- Roasted Red Pepper Sauce
- 16–18 large shrimp
- 3–4 of feta
Zhuoug Sauce
- 3 jalapeno peppers, halved
- 2 garlic cloves
- 1 teaspoon salt
- 1 bunch of fresh cilantro leaves
- 1/2 cup fresh parsley
- 1/2 teaspoon ground cumin
- 1/2 teaspoon coriander
- 1/4 teaspoon cardamom
- 1/2 cup extra virgin olive oil
- 1 lemon, juiced and zested
Instructions
- Preheat the oven to 400 F and pour the prepared roasted red pepper sauce into a 1o inch skillet.
- Dress the shrimp in 1-2 tablespoons of olive, 1/2 teaspoon of salt, a big pinch of pepper, and minced garlic then place the shrimp on top of the sauce and fill in the empty spaces with crumbled chunks of feta.
- Bake on the top rack in the oven for 12-15 minutes or just until the shrimp turn opaque and the sauce begins to bubble.
- While the shrimp and feta bakes prepare the zhoug by simply blending everything in the food processor and a sauce is formed
- Drize the zhoug over the freshly baked shrimp and feta in the roasted red pepper sauce and serve with toasted bread!
