1/3cup vinegar (i used Kosterinas Crushed Tangerine)
1 large cara cara orange, juiced and zested
2/3cup extra-virgin olive oil
1/2cup pitted olives, roughly chopped
1/2cup toasted pistachios, chopped
1 block of halloumi cheese cut into 6 slices (edges trimmed)
Combine all the agrodolce ingredients in a large jar and shake until combined
Preheat a non-stick skillet over medium for a minute until it’s warm before adding the slices of halloumi to sear for 2-3 minutes on each side. Watch closely, they’re ready when they are soft and golden.
Plate the halloumi then pour over the agrodolce on top and enjoy!
