

Olive and Herb Roasted Nuts

- 1 cup raw almonds
- 1/2 cup raw cashews
- 1/2 cup raw walnuts
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon dried herb blend (I used Herbes de Provence)
- 1 tablespoon fresh rosemary, finely chopped
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1/4 cup olive halved
Instructions
- Preheat the oven to 200 F and line a large baking tray with foil
- pat your olives very well until they are dry, lay them out onto the baking tray, and bake for an hour to an hour and a half until the olives have dried.
- Remove the olives from the tray and turn the oven up to 275 F.
- In a medium-sized bowl toss together all the ingredients
- Pour the nut mixture onto the large tray and bake for 20-30 minutes or until nice and golden.
