Olive and Herb Roasted Nuts


Units Scale
  • 1 cup raw almonds
  • 1/2 cup raw cashews
  • 1/2 cup raw walnuts
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon dried herb blend (I used Herbes de Provence)
  • 1 tablespoon fresh rosemary, finely chopped
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/4 cup olive halved


  1. Preheat the oven to 200 F and line a large baking tray with foil
  2. pat your olives very well until they are dry, lay them out onto the baking tray, and bake for an hour to an hour and a half until the olives have dried.
  3. Remove the olives from the tray and turn the oven up to 275 F.
  4. In a medium-sized bowl toss together all the ingredients
  5. Pour the nut mixture onto the large tray and bake for 20-30 minutes or until nice and golden.
