

Mint Pistachio Pesto

- 1/4 cup pistachios, roasted
- 2 tablespoons hemp seeds
- 1/2 cup fresh mint
- 1 orange, zest, and juice from half
- 1/4 cup parmigiano reggiano or pecorino. freshly grated
- 1/2 cup extra virgin olive oil
Instructions
- Combine all ingredients besides the oil in a food processor and pulse 5-6x then keep it running and slowly pour in the oil till it’s the consistency of your liking
