Mascarpone Pea Sauce

  • 1 cup english peas
  • 1/4 cup pecorino, freshly grated
  • 1/4 cup parmesan, freshly grated
  • 1/4 cup mascarpone
  • 1 lemon, juice, and zest
  • 56 sprigs of mint
  • 1 teaspoon black pepper
  • salt if needs it when you taste

1 lb Pasta


  1. In a medium pot bring water up to a boil and blanch the English peas for about 2 minutes then add them to a blender with 1/4 cup of the water from the pot.
  2. Next, add all the remaining sauce ingredients to the blender and blend on high until creamy.
  3. Cook the pasta in salted boiling water for however long according to the package and then once it’s drained toss it with the pea sauce
  4. Plate the pasta, top with more parmesan, and enjoy!
