

Mascarpone Pea Pasta

Mascarpone Pea Sauce
- 1 cup english peas
- 1/4 cup pecorino, freshly grated
- 1/4 cup parmesan, freshly grated
- 1/4 cup mascarpone
- 1 lemon, juice, and zest
- 5–6 sprigs of mint
- 1 teaspoon black pepper
- salt if needs it when you taste
1 lb Pasta
Instructions
- In a medium pot bring water up to a boil and blanch the English peas for about 2 minutes then add them to a blender with 1/4 cup of the water from the pot.
- Next, add all the remaining sauce ingredients to the blender and blend on high until creamy.
- Cook the pasta in salted boiling water for however long according to the package and then once it’s drained toss it with the pea sauce
- Plate the pasta, top with more parmesan, and enjoy!
