

Smoked Salmon and Beet Hummus Bagel Sandwich

- 1 bagel or piece of bread, toasted
- 3–4 tablespoons beet hummus
- 4–5 cucumber, thinly sliced
- 4–5 pieces smoked salmon or “smoked” carrots
- microgreens
- 2–3 pickled red onions
PICKLED RED ONIONS
- 1 red onion, peeled and thinly sliced
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/2 cup apple cider vinegar
- 1/2 cup boiling water
- Combine everything into a glass jar, and shake to stir. Let the jar cool completely at room temperature for 2 hours then store in the fridge, They are ready to eat usually 4-5 hours later!
Instructions
- Toast your bagel or bread, spread on some hummus, layer on the cucumbers, salmon or carrots, pickled red onions, and micro greens and enjoy!
