Smoked Salmon and Beet Hummus Bagel Sandwich


Ingredients

Units Scale
  • 1 bagel or piece of bread, toasted
  • 34 tablespoons beet hummus
  • 45 cucumber, thinly sliced
  • 45 pieces smoked salmon or “smoked” carrots
  • microgreens
  • 23 pickled red onions

PICKLED RED ONIONS

  • 1 red onion, peeled and thinly sliced
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 cup apple cider vinegar
  • 1/2 cup boiling water
    • Combine everything into a glass jar, and shake to stir. Let the jar cool completely at room temperature for 2 hours then store in the fridge, They are ready to eat usually 4-5 hours later!

Instructions

  1. Toast your bagel or bread, spread on some hummus, layer on the cucumbers, salmon or carrots, pickled red onions, and micro greens and enjoy!
