Lemon Ricotta Summer Squash Pizza


Ingredients

LEMON RICOTTA SAUCE

    • 1 cup ricotta
    • 1 small lemon zest & juice
    • 1/3 cup parmesan, freshly grated
    • 1 tablespoon fresh oregano, finely chopped
    • olive oil to drizzle
  • 1 SMALL YELLOW SQUASH, THINLY SLICED
  • 1 PIZZA CRUST
  • FRESH BASIL LEAVES

Instructions

  1. Preheat the oven to 450 F and in a small bowl combine everything together for the ricotta sauce.
  2. Spread 2/3 of the ricotta onto the pizza crust, then the squash then add dollops of the remaining ricotta on top of the squash layer. Lastly, drizzle with olive oil and a sprinkling more of parmesan before baking.
  3. Bake until golden brown and bubbly, depending on your pizza crust, then add the basil
