

Lemon Ricotta Summer Squash Pizza

LEMON RICOTTA SAUCE

- 1 cup ricotta
- 1 small lemon zest & juice
- 1/3 cup parmesan, freshly grated
- 1 tablespoon fresh oregano, finely chopped
- olive oil to drizzle
- 1 SMALL YELLOW SQUASH, THINLY SLICED
- 1 PIZZA CRUST
- FRESH BASIL LEAVES
Instructions
- Preheat the oven to 450 F and in a small bowl combine everything together for the ricotta sauce.
- Spread 2/3 of the ricotta onto the pizza crust, then the squash then add dollops of the remaining ricotta on top of the squash layer. Lastly, drizzle with olive oil and a sprinkling more of parmesan before baking.
- Bake until golden brown and bubbly, depending on your pizza crust, then add the basil
