

Lemon Poppyseed Cookie Dough Bites

- 1 cup almond flour
- 2 tablespoons coconut flour
- 1 lemon, zested
- 1 teaspoon vanilla extract
- a pinch of salt
- 2 tablespoons coconut oil, melted
- 2 tablespoons honey
- 2 teaspoons poppy seeds
Instructions
- Add everything to a bowl and mix
- Form and roll into small bites with light pressure
- Place in the fridge for at least 30 minutes to firm
- Can be stored at air temperature for 2-3 days and in the fridge for weeks
