

Lemon Ginger Granola

- 2 cups rolled oats
- 1/2 cup honey
- 1/4 cup coconut sugar
- 1/4 cup coconut oil, melted
- 1/2 cup rice crisps
- 1/3 coconut shreds
- 1/4 candied ginger
- 2 ginger
- 1 tablespoon turmeric
- 1/4 salt
- 1 lemon, zested
- 3 drops lemon essential oil (optional)
Instructions
- Preheat the oven to 323 F and line a large baking tray with parchment
- In a medium-sized bowl toss all the ingredients together
- Pour onto the baking tray and pack down the granola batter to create large clumps when baking
- Bake for about 12-15 minutes before tossing then bake for another 8-10 minutes or until just slightly golden.
- Let cool completely before removing from the tray to keep clumps intact.
- Store in an air-tight container for a few weeks in the pantry
