Lemon Ginger Granola


Units Scale
  • 2 cups rolled oats
  • 1/2 cup honey
  • 1/4 cup coconut sugar
  • 1/4 cup coconut oil, melted
  • 1/2 cup rice crisps
  • 1/3 coconut shreds
  • 1/4 candied ginger
  • 2 ginger
  • 1 tablespoon turmeric
  • 1/4 salt
  • 1 lemon, zested
  • 3 drops lemon essential oil (optional)


  1. Preheat the oven to 323 F and line a large baking tray with parchment
  2. In a medium-sized bowl toss all the ingredients together
  3. Pour onto the baking tray and pack down the granola batter to create large clumps when baking
  4. Bake for about 12-15 minutes before tossing then bake for another 8-10 minutes or until just slightly golden.
  5. Let cool completely before removing from the tray to keep clumps intact.
  6. Store in an air-tight container for a few weeks in the pantry
