Lamb Burgers, Caramelized Red Wine Onions, and Whipped Lemon Goat Cheese


Ingredients

LAMB BURGERS

  • 2 garlic cloves, minced
  • 2 tablespoons parsley, finely chopped
  • 2 tablespoons mint, finely chopped
  • 2 teaspoons lemon zest
  • 1 teaspoon dried oregano
  • 1/2 teaspoon coriander
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound ground lamb

CARAMELIZED RED WINE ONIONS

  • 1 tablespoon butter
  • 1 medium red onion (thinly sliced)
  • 1/4 teaspoon kosher salt
  • 1/41/3 cup red wine

WHIPPED LEMON GOAT CHEESE

  • 1 log of chevre cheese (goat cheese)
  • 1 lemon, zested and half juiced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon honey
  • 23 teaspoons olive oil

Instructions

  1. In a bowl, combine all the lamb burger ingredients and form into 6-8 patties then saute in a pan or grill
  2. For the caramelized onions, in a saute pan melt the butter, and add the onion and salt. Cook the onions on medium-low for about 608 minutes then add in the red wine and simmer for another 10 minutes until soft and the wine has evaporated.
  3. Beat all the cheese ingredients together in a bowl.
  4. Assemble the focaccia bun with a spread of the lemon goat cheese on each side, the lamb burger, the onions and enjoy!
