


Lamb Burgers, Caramelized Red Wine Onions, and Whipped Lemon Goat Cheese

LAMB BURGERS
- 2 garlic cloves, minced
- 2 tablespoons parsley, finely chopped
- 2 tablespoons mint, finely chopped
- 2 teaspoons lemon zest
- 1 teaspoon dried oregano
- 1/2 teaspoon coriander
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound ground lamb
CARAMELIZED RED WINE ONIONS
- 1 tablespoon butter
- 1 medium red onion (thinly sliced)
- 1/4 teaspoon kosher salt
- 1/4–1/3 cup red wine
WHIPPED LEMON GOAT CHEESE
- 1 log of chevre cheese (goat cheese)
- 1 lemon, zested and half juiced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon honey
- 2–3 teaspoons olive oil
Instructions
- In a bowl, combine all the lamb burger ingredients and form into 6-8 patties then saute in a pan or grill
- For the caramelized onions, in a saute pan melt the butter, and add the onion and salt. Cook the onions on medium-low for about 608 minutes then add in the red wine and simmer for another 10 minutes until soft and the wine has evaporated.
- Beat all the cheese ingredients together in a bowl.
- Assemble the focaccia bun with a spread of the lemon goat cheese on each side, the lamb burger, the onions and enjoy!
