
High Protein Banana Bread

- 3 medium bananas, very overripe
- 2 large eggs, room temperature
- 1/2 cup greek yogurt (sub vegan yogurt to make this dairy-free)
- 1/2 cup sugar
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour (or gluten free 1:1 flour)
- 1 cup almond flour
- 1/2 cup protein powder (I used sprout living , CAROLINE20 saves 20%)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
- In a large mixing bowl, mash the overripe bananas until smooth.
- Add the eggs, Greek yogurt (or vegan yogurt), sugar, and vanilla extract to the mashed bananas. Mix well until fully combined.
- In a separate bowl, whisk together the all-purpose flour (or gluten-free 1:1 flour), almond flour, protein powder, baking powder, baking soda, and kosher salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Slice and enjoy your delicious banana bread!
