High Protein Banana Bread

Units Scale
  • 3 medium bananas, very overripe
  • 2 large eggs, room temperature
  • 1/2 cup greek yogurt (sub vegan yogurt to make this dairy-free)
  • 1/2 cup sugar
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour (or gluten free 1:1 flour)
  • 1 cup almond flour
  • 1/2 cup protein powder (I used sprout living , CAROLINE20 saves 20%)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, mash the overripe bananas until smooth.
  3. Add the eggs, Greek yogurt (or vegan yogurt), sugar, and vanilla extract to the mashed bananas. Mix well until fully combined.
  4. In a separate bowl, whisk together the all-purpose flour (or gluten-free 1:1 flour), almond flour, protein powder, baking powder, baking soda, and kosher salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  9. Slice and enjoy your delicious banana bread!
