Grilled Lemon Sumac Salsa Verde


Ingredients

  • 1 lemon, sliced into thick rounds, seeds removed

  • 1 small garlic clove, finely grated

  • 1 tsp ground sumac

  • 1/2 tsp flaky sea salt

  • 1/4 tsp Aleppo pepper

  • 1/3 cup extra virgin olive oil

  • 1/2 cup flat-leaf parsley and/or cilantro, finely chopped

  • 2 tbsp fresh basil and/or mint, finely chopped

  • 2 green onions, finely chopped

  • 2 tsp red wine vinegar

  • 1-2 tsp minced anchovy or a splash of Worcestershire or soy sauce (optional, for umami)


Instructions

  1. Grill lemon rounds on high heat until well charred on both sides. Let cool slightly, then finely chop — peel, pulp, and all.
  2. In a bowl, combine the chopped grilled lemon, garlic, sumac, salt, Aleppo pepper, red wine vinegar, herbs, green onion, and olive oil. Stir in anchovy, Worcestershire, or soy sauce if using.

  3. Let the salsa sit for at least 10–15 minutes before serving to allow flavors to meld. Taste and adjust seasoning if needed.
