Creamy Butternut Squash Parmesan Pasta

  • 1 lb pasta
  • 1 cup butternut squash white bean soup
  • 1/2 cup fresh grated parmesan, plus more for topping
  • 2 tablespoons to 1/4 cup reserved pasta water
  • 2 tablespoons butter
  • optional – protein such as chicken or meatballs


  1. Bring a large pot to a boil and cook pasta according to instructions.
  2. Reserve the pasta water before draining the pasta.
  3. Add the drained pasta back into the pot with the cheese, saice, and butter.
  4. Stir the pasta adding in a tablespoon of reserved water at a time until it’s thick and creamy and the pasta is fully coated in sauce.
  5. Top with more parmesan
