

Creamy Butternut Squash Parmesan Pasta

- 1 lb pasta
- 1 cup butternut squash white bean soup
- 1/2 cup fresh grated parmesan, plus more for topping
- 2 tablespoons to 1/4 cup reserved pasta water
- 2 tablespoons butter
- optional – protein such as chicken or meatballs
Instructions
- Bring a large pot to a boil and cook pasta according to instructions.
- Reserve the pasta water before draining the pasta.
- Add the drained pasta back into the pot with the cheese, saice, and butter.
- Stir the pasta adding in a tablespoon of reserved water at a time until it’s thick and creamy and the pasta is fully coated in sauce.
- Top with more parmesan
