Cheesy Roasted Garlic Baked Spaghetti Squash


Ingredients

  • 1 large spaghetti squash
  • 1 cup roasted garlic white bean dip
  • 1 cup grated cheese, melting cheese of choice (mozzarella, gouda, cheddar, or gruyere would work)
  • 1/2 cup grated parmesan, divided

Instructions

  1. Preheat the oven to 425 F
  2. Cut the squash in half, rub some olive oil on the inside of each and face it skin side up on a foil baking sheet on a baking tray. Bake until the squash is cooked and soft on the inside – about 20 minutes.
  3. While the squash is baking, combine the dip, grated melting cheese, and 1/4 cup parmesan.
  4. Once the squash is baked, flip both sides over, scoop out the seeds in the center and fill each with half of the cheesy dip mixture.
  5. Turn the oven onto low broil and place the squash underneath for about 10 minutes, keeping a close eye on it so it’s doesn’t burn just turns golden brown and bubbly.
  6. Let the squash cool for a few minutes before enjoying!
