Apple Cinnamon Oat Bars

  • 1/2 cup butter, melted, at room temperature
  • 1/2 cup lightly packed brown sugar
  • 1/4 cup honey or maple syrup
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup regular oats
  • 1/3 cup walnuts, chopped
  • 1 apple, thinly sliced


  1. Preheat oven to 350 °F and grease an 8×8 deep baking pan lined with parchment
  2. stir together the oil/butter and sugar in a medium bowl, then add the egg and vanilla until well mixed
  3. to the wet mixture add the flour, baking soda, salt, and only 1.5 teaspoons of cinnamon
  4. fold in the oats and walnuts to the batter then press about 1/2 to 2/3 of the dough evenly into the pan
  5. combine the extra tablespoon of sugar with the remaining 1/2 teaspoon of cinnamon in a small bowl with the sliced apple
  6. spread the apple cinnamon sugar mixture over the batter in the pan
  7. then crumble the remaining batter evenly over the top of the apples
  8. bake for 20-22 minutes or until overall lightly golden brown
