


Apple Cinnamon Oat Bars

- 1/2 cup butter, melted, at room temperature
- 1/2 cup lightly packed brown sugar
- 1/4 cup honey or maple syrup
- 1 large egg, at room temperature
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup regular oats
- 1/3 cup walnuts, chopped
- 1 apple, thinly sliced
Instructions
- Preheat oven to 350 °F and grease an 8×8 deep baking pan lined with parchment
- stir together the oil/butter and sugar in a medium bowl, then add the egg and vanilla until well mixed
- to the wet mixture add the flour, baking soda, salt, and only 1.5 teaspoons of cinnamon
- fold in the oats and walnuts to the batter then press about 1/2 to 2/3 of the dough evenly into the pan
- combine the extra tablespoon of sugar with the remaining 1/2 teaspoon of cinnamon in a small bowl with the sliced apple
- spread the apple cinnamon sugar mixture over the batter in the pan
- then crumble the remaining batter evenly over the top of the apples
- bake for 20-22 minutes or until overall lightly golden brown
