

Almond Orange Cherry Agrodolce Seared Scallops

Almond Orange Cherry Agrodolce
- 1/3 cup dried unsweetened cherries, chopped
- 1/3 cup vinegar (my favorite is red wine)
- 1 large orange, juiced and zested
- 2/3 cup extra-virgin olive oil
- 1/2 cup pitted castelvetrano olives, roughly chopped
- 1/2 cup toasted almond, chopped
- 1/4 cup honey
- 3/4 teaspoon kosher salt
- freshly ground pepper
12-16 scallops (2-3 servings)
Instructions
- Combine all the agrodolce ingredients in a large jar and shake until combined
- Preheat a skillet over medium heat, pat the scallops nice and dry with a paper towel, toss in oil, a big pinch of salt, and fresh cracked pepper, and sear for 1-2 minutes on each side in olive oil
- Plate the scallops and pour over the agrodolce on top, optional a little bit of fresh chopped parsley on top, and enjoy!
