Herbed Koftas


Ingredients

  • 1 small onion, quartered
  • 23 fresh garlic cloves, peeled
  • 1 handful fresh parsley (about 1/4 cup packed)
  • 1 handful fresh cilantro (about 1/4 cup packed)
  • 1 tablespoon extra virgin olive oil
  • 1 lb ground grass-fed beef, turkey, chicken, or lamb
  • 1 tablespoon baharat seasoning
  • 2 teaspoons salt

Instructions

  1. In a food processor, combine the onion, garlic, parsley, and cilantro. Pulse until finely chopped.
  2. Add the ground meat of your choice, olive oil, baharat seasoning, and salt to the food processor. Pulse again until just until everything is well combined, making sure not to overwork the meat.
  3. Lightly pack the mixture into 2-3 inch logs or oval-shaped patties.
  4. Cook the koftas:
    • Grill: Preheat your grill to medium heat and cook the koftas for about 6-8 minutes per side, or until they are browned and fully cooked through.
    • Pan-sear: Heat a bit of olive oil in a skillet over medium heat and cook the koftas for 5-7 minutes per side.
    • Bake: Preheat your oven to 375°F (190°C) and bake for 20-25 minutes, flipping halfway through.

Serve your koftas with warm pita, a side of fresh salad, or over rice, and don’t forget to drizzle them with your favorite Mediterranean sauce!
